Refreshing Waldorf Salad
Farm fresh green salads to healthy fruit salads, summer salads are full of seasonal ingredients. Salads are healthy and tasty both at the same time, most of us are aware of this in a general way. But the specifics of their healthfulness are less known; salads are full of heart-healthy, cancer fighting, cell-building ingredients and are fantastic weight-loss and weight-maintenance tools. Salad's other contributors to heart health include the ever-useful antioxidants. Being low on calories, salad is the most most satisfying way to spend, It costs you as much as a slice of bread.
The Waldorf salad is served as an appetizer or a light meal. A Waldorf salad is a salad traditionally made of fresh apples, celery and walnuts, dressed in mayonnaise, other ingredients, such as chicken, turkey, grapes, and dried fruit (e.g. dates or raisins) are sometimes added.
Waldorf Salad Recipe:
Prep time: 10 minutes
½ cup chopped, slightly toasted walnuts
½ cup celery, thinly sliced
½ cup red seedless grapes, sliced (or a 1/4 cup of raisins)
½ cup pomegranate for garnishing
1 sweet apple (chopped)
3 Tsp mayonnaise
1 Tsp fresh lemon juice
Take a medium sized bowl, whisk mayonnaise (or yogurt) and lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Add crumbled cheese and pomegranate seeds to Waldorf salad for garnishing. Serve on a bed of fresh lettuce.
