The Shangri-La hotel in New Delhi likes to celebrate world's finest cuisines with verve and this time it is the Mexican fiesta at Cafe Uno (May-23 till June-1). The 24-hour restaurant with Mexican makeover has master chefs Sergio Synder and Roberto Treves specially flown in from Mexico. The duo's love affair with India dates back to the 1970s, when they first came and worked for various heritage hotels in Rajasthan and Shimla and also the Sheraton Hotels across the country.


Some of the dishes meticulously crafted by them are Chili con carne, fish veracruzana, enchilladas, burritos, fajitas and tacos. And, of course, you can choose from the list of margaritas and tequilas (made with fermented juice of the Agave cactus) and a range of drinks with a Mexican hint.The multi-talented master chef Sergio is also an accomplished concert pianist, having studied piano at the New York's Julliard School of Music.


His favourites are Beethoven's piano sonatas and solo concertos of jazz virtuoso Keith Jarret. Equally eclectic are his taste buds and he loves the south Indian Chettinad, Punjabi food and Hyderabad's Biryani. Chef Roberto, speaking to fnbworld about the meeting point for Indian and Mexican food was spontaneous in pointing to the myriad spices that are common to both world cuisines. He said, like the Indians, Mexicans too love to play with their spices a lot while cooking - be it cloves, cinnamon or red chillies.
